   One-pan spiced eggplant with couscous is a hearty vegetarian dinner that comes together simply. Inspired by a middle eastern recipe, I've added a bevy of spices, plus tomatoes that cook down into a soft, savory jam. Herbs and a dollop of Greek yogurt finish off this hearty meal.    The group will be led by Bo Bryan, Myrtle Beach Poet Laureate and author. Expect discussions on the craft and practice of writing. Why do writers write? Why do poets feel the need to reach out?
